Hi,
I was wondering if anyone would be interested in gluten free recipies? I have a bunch that are pretty good!:)

I know sometimes almost ANYONE with digestive problems might benefit by consuming
less (or no) gluten. We would love to see them and many thanks!! :)

I just made these tonight and they were great plus they were easy to make!! :):D:p
Blueberry Muffins
Makes 12 muffins
2 cups all purpose gluten free flour ( I used Kinickinack's)
2/3 cup granulated sugar ( I used splenda)
1 tablespoon baking powder
1 teaspoon baking soda
¾ teaspoon xanthan gum
¼ teaspoon salt
¼ - ½ teaspoon nutmeg (to taste)
1 ½ cups unsweetened fresh blueberries (I used frozen, undefrosted)
½ cup milk (can use vanilla flavored almond milk)
½ cup canola oil ( for fat free I used 1/2 cup applesause)
2 large eggs (I used 1/2 cup egg beaters)
½ teaspoon pure vanilla extract
Cinnamon sugar for garnish or optional streusel topping (I used the streusel topping)
Preheat oven to 375 degrees. Position rack in center of oven. Spray muffin pan with cooking spray.
Mix flour, sugar, baking powder, baking soda, xanthan gum, salt, and nutmeg in large mixing bowl. Add blueberries; stir to coat evenly.
Combine milk and oil in small bowl; remove 1 tablespoon of combined liquid and discard it. Beat in eggs and vanilla. Add liquids to blueberry mixture and stir until just blended.
Fill muffin pans 2/3 full. Sprinkle top with cinnamon sugar or streusel topping. Bake 18 – 25 minutes until lightly golden. Remove muffins from pan and serve immediately or cool on a rack.
Streusel Topping
½ cup all purpose gluten free flour
1/3 cup brown sugar
½ teaspoon cinnamon
¼ teaspoon xanthan gum
3 tablespoons unsalted butter, melted
Combine flour, brown sugar, cinnamon, and xanthan gum in a small bowl; stir to blend. Pour in butter and stir until all dry ingredients are moistened. Break into small pieces with spoon.

OK..Kathy..where do we get this gluten free flour and can you use it for
most things? :rolleyes::D

lol... it helps make the dough stick together. You can still make the recipe with just plain old normal flour too. :)

With regurlar flour if you are not celiac. Celiac's need to stay away from regular flour. :(

You can find gluten free flour at most health food stores, Whole Foods, Trader Joe's, and some grocery stores. You can also buy it on amazon.com. :)

Hi,
Here is another yummy gluten free recipe :) :p
Gluten-Free Pineapple Upside Down Cake
Ingredients
1 Tablespoon margarine
1/2 cup brown sugar
4 pineapple slices
4 egg yolks
3/4 cup granulated sugar
juice and grated zest from 1/2 lemon
4 egg whites
3/4 cup potato starch
1 teaspoon baking powder
Directions
Melt the margarine and brown sugar in a 9-inch square-baking pan. Arrange the pineapple slices over the melted sugar. Set aside.
In a large mixing bowl, beat the egg yolks until light. Gradually add the granulated sugar, lemon juice and grated rind; continue beating until creamy. In a clean bowl, with clean beaters, beat the egg whites until stiff but not dry. Gently fold the stiffly beaten egg whites into the egg yolk mixture.
Combine the potato starch and baking powder; fold into the batter. Carefully pour the batter over the fruit. Preheat oven to 350 degrees. Bake for 30 minutes. Invert the cake onto a serving platter and let cool.

Gluten-Free Coconut Date Cookies
Ingredients
1/2 c sugar
1/2 lb dates, cut up
3 T shortening
1 1/2 c walnuts, chopped
1 egg
1 c grated coconut
Directions
Cream the sugar, shortening and the egg very well. Add the dates, walnuts and coconut; mix well. Drop by the teaspoonful, 2 inches apart, onto a greased cookie sheet. Preheat oven to 350 degrees. Bake for 15 minutes. Watch the color and remove the cookies from the oven when they are golden brown. Do not over bake. Remove cookies from the cookie sheet when cool. Yields about 36 to 40 cookies.
