Okay, I think my husband has totally lost his mind.
As many of you know, my husband works out of state and is gone for 3 weeks at a time. When he is home for his week, I fully understand the concept of wanting a home cooked meal.
This week I think he has lost his mind....Here is tonights dinner menu.
Beans, fried potatoes w/onions, and cornbread.
Okay no problem, however what is totally confusing me is he also started a pot of chicken to boil. When I asked why, he said for chicken and dumplins.
?????????(WHAT???)
So the total menu for tonight would be......
Beans, fried potatoes w/onions, cornbread
AND
Chicken and dumplins, with fried squash and green beans.
Is he tryin to get his whole week of homecooked meals in in one night?
Guess what everyone is having for leftovers tomorrow night !!!!

When you are gone for three weeks and eating lord knows what on the road, a salad with sardines or vanilla wafers with mustard between them is not out of the ordinary. Better than you might think!:D Sprinkle hot peppers on his corn flakes if he wants it.

I think I can relate! I used to travel 5 days a week and got so tired of hotel, fast food and restaurant food. Blah. I still can't look a burger in the eye. :p
Sometimes on the weekends, I'd cook like a maniac so I could eat home cooked food...then go visit Mom so I could eat HER home cooked food too. *cough* Of course, sitting behind the wheel made it hard to burn off the calories!

Is it to early to put my order in? Fried Green tomatoes, collard greens, black eyed peas, pan fried cornpone, center cut chops - butterfly'ed and slowly pan fryed lightly in olive oil and garlic. Iced tea- unsweetened with two packs of splenda and a mint leaf. All served under a shade tree with three good looking women fanning me. Don't wake me!

I have not spent more than a week in Texas but do remember the drive through bars and speaking softly due to most of those dudes carrying guns! Of course around here about 60% carry with and sometimes without a permit. One huge question!!!! Who in the world told you Texas was the BBQ Capitol. Wrong! and Wrong again! :) I bet that is just an assumed thought with no real substance. You must remember we have been doing it way before Texas was even a state. Tryon, NC hosts a huge competition each year - yet to see a Texan win. Lexington, NC is called the BBQ Capitol of the World and closes the whole town down for its Festival. There is a pig statue on almost every corner. Just like birds we grow up with a generic mental imprint that allows us to make the very best BBQ anywhere. :D You have the nerve to even think Texas is the Capitol? Texas has at least 100 years to try and catch up. BBQ'ing Beef is called grilling - real BBQ is nothing less than the best slow cooked smoked juicy cubed pork - none of that tough old chewy beef for me! All the sauce in the world will not cover that stuff. Jerky with a sauce is what it should be called. OK now it is your time to take a shot - boiled peanuts. Our really bad weak spot. Take your best shot! I can take it!

Alls ya gotta do is have a couple spare bedrooms, and a shower.

I have thought about turning one of the houses in NC over to a Management company to rent out during the Furniture Market and during the golf Tournaments. It would only be a few weeks out of the year but be better than renting on a regular basis. Less trouble and damage than regular renting. But to answer you about what you were saying. We don't have the room for that many here. A meal or two is not out of the question. There are lots of Vacation rentals here but that is not a cheap way out. Of course with gas getting higher vacation season might change here. There really are many cabins-cottages and regular houses here that rent by the week for vacations. Considering motel cost it may be cheaper. That allows for cooking. There are some real good - I mean real good home style restuarants here. Fast food here is horrible - service stinks! Only a few really nice restuarants. You can actually eat at the home style ones for less than you can buy and cook yourself. Talk about a great place to stay and have something to do after work, this is it if you like the outdoors. Mountains, lakes, whitewater, state parks, national forests, camping of all kinds. Close enough to Harrah's if you like casino's. A Braves Game about an hour and half away in Atlanta. Charlotte about two hours away. Second thought they are supposed to be working.

Kat, yer always welcome in Texas! May not have much room, but everyone's friends in Texas! :)
Now unclejunk1...now go on & git out...Texas was it's own COUNTRY when North Carolina was just brush. We *know* we invented BBQ, cuz we did.
And we don't put no runny, yucky sauce on our BBQ. Real barbecue don't have sauce on it! LOL

The guys pay on average anywhere from $80-$100 dollars a night on motel rooms....Sometimes they get a better deal but most of the time it's in that range. Then they still gotta eat and do laundry at those motels.
I have talked to Ron about findin those 2 or 3 bedroom apts that can rent by the week. Furnished with a kitchen would still be cheaper. But for the most part, they all try to stay at the same place, as at the end of the job they rotate in 12 hour shifts. They generally have 1 rental car between them to use, so it's just more convienent for them to all stay at the same place. Some of the guys want the most expensive motels, Ron is just happy to have a clean bed and a place to lay his head on a pillow. He does try to get a room with a fridge/microwave and goes to the local market to get some stuff to "cook" in the room. He tries to save money any way he can, but can't always manage depending on where they are staying.
LOL if Ron is ever as close as Texas, we will be stayin at a motel, cause I'll be drivin to spend the week with him.
And we are not at home, so it just wouldn't be right if ya know what I mean.

Yep, you are right it was called Mexico. The goat is real good, at least that is what they tell me. You know in Mexico they claim they invented everything that we know came from here. You know like peanuts! Real BBQ is smoked with Hickory - real Hickory! We don't throw ole fatty link sausage on the barbie here. You must remember that the first colony in America was in Dare Counry, NC, first child born here was Virginia Dare. Think about - who was first? Mexico does not count!

Kathy there are cabins here that would allow them all to have room to breath and come and go as they please, plus cook if they even want to. Next time you know they will be close to here let me know and I will put them in touch with people that will set them up with a nice place. The really high dollar places on the lakes are out of their range but plenty of very nice places available. We know some folks that own a dozen or more cabins a few miles from us that would be more than happy to throw them a deal. Secluded in a mountain setting but still close to town for food or what ever. I can also list the best places to eat including some really nice places if they decide to splurge a night or two. Just don't promise a place on a lake.

Actually, unc...it was Native American before the Spanish got here in the 1500's. They hung around a bit, then the French took over, then the Spanish again and well...reader's digest version: LOL
http://www.lsjunction.com/events/events.htm
The name Texas derives from táyshaʔ, a word in the Caddoan language (http://en.wikipedia.org/wiki/Caddoan_languages) of the Hasinai, which means "friends" or "allies".
Yes, cabrito (goat) is *very* good! Whenever I can make it across the border (about 3 hours away) I try to have some at one of my favorite restaurants. Wonderful roasted flavor.
I don't think the Pilgrims had landed when the Spanish wuz already here. "We" already knew who we were then, though. LOL Feisty bunch...

I love it!:D You don't quit easy do you! I grew up on the banks of the Deep River! Creek Indians! I now live between Keowee and Tugaloo, both lower Cherokee villages. Really don't know why it makes a difference. The Lost Colony of Dare County was still the first. Jamestown, VA was the first sucessful settlement. The Pilgrams came much later. Granted the Spanish came earlier for a visit and came up through Florida and on into N.C. looking for gold before going west. If you really wanted to argue, you could say the American Indians originated from the area we now know as Russia. Fact still remains we were first and even if we were not, we perfected it!:D Ooooh N.C. BBQ! Sylvia I have enjoyed the banter! My wife is ready to shoot me! Said I have been on here for hours! You win this time - I have to go!

Dona,
Sorry about that. We didn't mean to keep Rick at the comp for so long.
You know him when he gets started into debates though.
I love it, he knows so much about the local history there and other places too.
